July 8 - I trust that all of you had a fantastic & safe 4th of July weekend and that you were able to enjoy some awesome fireworks!
The patio is now OPEN!!! The patio includes seating for 20, a HUGE stone fireplace, & the best spot in Eagles Mere, other than on the lake of course, to relax & enjoy the outdoors all while dining on the best cuisine on the mountain.
Come sip a good glass of wine & watch the embers burn on a late summer night!
A note for those who LOVE the Boys of Eagles Mere Pizza - I suggest ordering in advance! They have been very, very busy this past weekend and have even had to turn some away because of the high demand. Thank you for all of your support!
This past week Holly Weiss visited Eagles Mere for a book signing & even though I was away for the weekend I had the chance to meet that lovely lady when she checked in.
For those of you who have not yet met Holly, you are missing out! I have finished the book and let me tell you, I wish it wouldn't have ended! I LOVED IT! Holly's story was very captivating and I just couldn't get enough. I recommend all of you get your copy, either here at the Crestmont Inn or at the Eagles Mere book store!
So in just over one month I will be Mrs. Brock Hite - WOW! There are still so many things to be done, deciding on the cake decorations, picking out the music, finishing our pre-marital counseling with the Pastor…..geesh! But I wouldn't want it any other way. : --) I am having a BLAST, and I'm pretty sure my Mom is too!
My dress is gorgeous! I am very happy with how things are turning out and the new ideas we have come up with. Now it's onto applying for our marriage license, buying a house, moving & changing my last name…..all exciting tasks, yet HUGE headaches! So, thank you Brock, Mom & Dad, my future in-laws & all of my friends for allowing me to be myself (bridezilla in the slightest) and loving me anyway!

June 9 - I just wanted to let you all know that my wedding gown is here!
I will be in Ocean Grove, NJ for the weekend so I'm waiting until the 19th for my first fitting…..I can't express how excited I am! Of course it won't be ready to take home that day, it will need to be hemmed up and the beading will need to be sewn on the neck line and the empire waist. You'll have to form a mental image because there will be no pictures of it until after August 14th.
So let's pray for NO rain this weekend so we can all get out and enjoy our days off!
I'm sure I'll have some great news about the beach & my dress for my next post! And I will also have an update and pictures of the new patio.

June 2 - How was your Memorial Day weekend??? I trust that it was as fantastic as mine was! We couldn't have asked for better weather and I had a wonderful time with my family.
The boys had a taste of summer with the pizza business, as they were VERY busy! They made a lot of pizza and the sales far exceeded their expectations. They have a few new additions to the menu including breadsticks, Italian ice and various ice cream products. I have just one word - DELICIOUS! ***Be sure to order yours in advance - 525-3519!
A date for the season opening of the restaurant has now been set. June 11th the Crestmont Inn will be open for dinner Tuesday - Sunday nights, come join us!
And don't forget about the patio! This beautiful new feature is coming along nicely; we're just waiting on the walkway and the fireplace to be finished. We hope to be able to serve on the patio come the 1st of July.
Who's still a big fan of Aaron Kelly?? Don't miss out on the 'Aaron Kelly Day' in Laporte on Friday, June 4th! It is rumored that he may be there, so have your camera ready!

As of May 8, 2010 I'm a Mansfield Alum! Commencement took place in Mansfield at the University, of course. My parents along with Brock and one of my grandmothers attended the ceremony and were so gracious in presenting me with a big, beautiful bouquet of flowers.
After the commencement myself, Brock, my parents and both sets of my grandparents ate a fabulous dinner here at the Crestmont Inn. As a graduation gift Fred and Elna treated our party to dessert, which was fabulous as well. I was very glad to have my family here and show them around so that they may see what the Crestmont Inn is all about!
It feels wonderful to finally be finished with school and to officially be a member of the real world. However, this time in my life is bittersweet. Being out of school has given me a sense of relief, yet after 17 years of being a student it seems odd not to have homework to finish or a test to study for.
I know that I will again be experiencing this bittersweet feeling in August when I get married and move out of my parents home in which I have lived for the past almost 22 years.
Only three months until the big day for Brock and I! And I have so much to do, but now that school is over I will be locked in full speed ahead. My goal is to have everything completed by the middle of June when I have to start sending out invitations.
My next step is to have all of the guys measured for their attire and to nail down the cake and cupcake decorations. The most stressful part of the planning now is waiting on my gown to come in, then the beading and alterations will need to be done. Please pray that I don't turn into a Bridezilla!
The 'Crestmont' book IS HERE! We have several copies and you can get your own for just $20 each! I suggest you get one soon before we run out. This book is a one of a kind and Fred, Elna and even their standard poodle Annie are all characters in the novel! Now that I don't have any homework to do I'll have some time to read it.
Another update about the Inn - our patio and fire pit are almost complete! The patio is 22 feet in diameter and will host between four and six tables with chairs. Dinner will be served on the patio in good weather. The patio and fire pit are being constructed of flag stone for a natural feel and is located in the shade of the tall maple and beech trees near the rear of the restaurant building.
I'm thinking that this will be my new favorite place to stop and take a break! Pictures will be up as soon as the project is finished.

April 18, 2010 - It's almost here! "Crestmont", a historical fiction by Holly Weiss, is set for publication in May of 2010. We will have the book on display and for purchase here in our gift shop at the Crestmont Inn.
Here is the description:
"Interwoven into the story are details of the rich history of The Crestmont Inn, its owners and the town of Eagles Mere. Many attempts have been made to explain how the mountaintop take in Eagles Mere came to be. Crestmont gives a new twist to an old Native American legend."
How exciting, right? I strongly suggest that ALL Crestmont lovers get their copy, pronto! I personally can't wait to read it….I have heard many interesting stories from several guests that keep my curiosity churning.
I wouldn't say that I'm a history nut, but I love to hear the stories of such things as the original Crestmont. Interestingly enough, my parents own a pair of nightstands that belonged to the Crestmont, they were originally a blue color, and then my mother refinished them to the beautiful hardwood they are now. It's neat to say that they own a piece of history.
In other exciting news, Aaron Kelly is still going strong! Seems to be that Tuesday and Wednesday are the most stressful days here at the Inn all because of the anticipation and anxiety we have for Aaron's performances. I think that it is safe to say that Sullivan County, PA is moderately obsessed with Aaron Kelly, and rightfully so! Good luck Aaron!
The Boys of Eagles Mere Pizza now have t-shirts for purchase. These shirts come in several different colors and sizes - red, navy blue, white, heather gray and black. Get yours the next time you order a pizza pie!
Okay, okay, now I would like to talk about ME! This past weekend Brock and I, along with several others, were able to witness the wedding of two very good friends. We had a lot of fun and the food was outstanding. The wedding took place in the Canton, Pa area, which is where Brock calls home.
Next weekend, April 23-25, I am taking the opportunity to visit my best friend who attends Delaware Valley College in Doylestown, Pa. The college puts on an annual Agricultural Day at the end of April, in which the students are mainly responsible for planning and running this huge event and they do a fantastic job! Such activities at this event include a tour of the farms on campus by a tractor pulled wagon, do-it-yourself tie-die t-shirt booth, homemade apple cider, the Raceway Pig Show and a variety of other fun things. This is a two day event and there are several activities for those of all ages. If you are located or are visiting the South Eastern region of PA next weekend, you must experience A-Day for yourself!

First of all, I want to say hello to the Alderfer, Brashear and Miller couples who were visiting this past weekend and have expressed their interest in my blog. Thank you for the encouragement and continued support and I hope to see you again soon!
I have a major announcement to make; I am officially the Assistant Innkeeper here at the Crestmont Inn and loving every minute of it! This is my first full time job and I haven't even graduated yet, not so many college students can say that. Yes, my ego has doubled in size, but not to worry serving our guests will ALWAYS be my #1 goal!
The search for a wedding dress went fantastically well. I have found THE ONE at a remarkable low price and it is absolutely stunning. Of course I can't let out any details because I want my fiancé, Brock, to be surprised! Not only did I find my wedding gown, but I also found a dress for my Maid of Honor and got the chance to bond with my mother and future mother-in-law. It really was a lot of fun and quite an experience.
I don't know about you, but this beautiful weather has got me itching for summer! I had the chance to ride my horse several times in the past two weeks, which I've been waiting for all winter. I spend most of my free time with the horses and once the mud is gone I'll be out even more. There is nothing more wonderful than the warm spring air; it seems to make everything come alive!
Although the spring breeze and warm sun is quite refreshing I'm anticipating summer even more. All I can think about is taking a nap on the beach in the hot summer sun and cool ocean breeze. Funny that I love the beach because I HATE the sand! I suppose the hammock in the front lawn here at the Inn will have to do for now.

How about that snow? Our Winter Wonderland has officially arrived, along with 20 inches of snow! Therefore, it is the perfect time for cross country skiing and snow sledding! If you're in the area stop by the Crestmont Inn and feel free to borrow skis, boots and snow saucer.
Eagles Mere continues to look beautiful no matter the weather, rain or shine the town is outstanding and especially the snow covered trees.
As you may know the Boys of Eagles Mere Pizza has been doing great, but has been bumped up to a new level. The take-out window is finally here! Now, instead of having to get out of the car to come to the front desk to get your pizza, the take-out window allows you to pull right up and get your pizza without having to get out, so convenient right? It is now even easier to enjoy a Boys of Eagles Mere pizza!
With that, I want to mention the increasingly famous Aaron Kelly. If you are ordering a pizza from the Boys of Eagles Mere remember to mention Aaron Kelly and receive $2 off your order! Aaron is now in the Top 20 on American Idol and we all have our fingers crossed in hopes that his talent will progress him into the Top 16. Good luck Aaron!
As I had mentioned in my first blog, I am a senior in college and it is mid-semester for the students of Mansfield University. This means its Spring Break time! Unlike most students, I have nothing too exciting planned. In fact, I will be off from work here at the Crestmont and shopping and making plans for my wedding in August.
August 14, 2010 seems to be rapidly approaching and I have a lot to do in the five months ahead of me including finding a wedding dress, which is at the top of my agenda for Spring Break. Thanks to my Mom and best friends, things are coming together and I am having a wonderful time making memories and preparing for one of the most important days of my life!
Some of you may know that Sunday was the kick-off for the Flower Show in Philadelphia. I was able to attend the first day and was absolutely astounded to see the amazing talent of those who created displays for the show. Along with the elephant, hot air balloon and other various scenes made almost completely out of flowers and other plants, Delaware Valley College had a display of its own.
I mention this because my two best friends go to this school and we had an awesome time together!

Hey everyone! This is my first blog ever, so please bear with me!
My name is Katie Spencer and I am interning here in Eagles Mere at the wonderful Crestmont Inn. I will graduate in May with a bachelor's degree in Travel and Tourism. Fred and Elna have graciously accepted me as their Intern for the semester to fulfill my last requirements for my degree.
Although it is only my third week of interning I have learned so much here, interacting with guests is just not something that can be experienced in a classroom.
Exciting things are happening here at the Crestmont Inn. Check out the article about the Crestmont in the first anniversary edition of Inns Magazine's Weddings issue! The combined services of the Eagles Mere Country Club and the Crestmont Inn are known as Camelot, with "wedding specialists looking after you every whim", and indeed making our guests feel at home is what we strive for!
So we've all heard the news that the toboggan run will not be operating this year, bummer! However, the forecast is calling for 4-6 inches of snow for the weekend, which is wonderful for those X-country skiers!
Have you had the chance to taste the Boys of Eagles Mere pizza yet? You should!
The boys have been very busy in the past few weeks with perfecting the recipe and getting their name out there. The business is off to a great start and we are looking forward to the continued business. A big thank you is in order to all of those in the community who have already started buying pizzas and calling and writing with words of encouragement!
For those of you who watch American Idol… Aaron Kelly, a local of Sonestown in Sullivan County, has graced America with his talent and has gotten himself a golden ticket to Hollywood. We are all routing for you Aaron!
Growing up in Northeast PA gets you use to the cold weather, but what's cold weather without the snow? I'm not a fan of either!
